Job DescriptionDirect and execute food preparation and display in a campus dining facility with multiple menus and stations.

Essential Functions

  • Employee will demonstrate TSTC Core values of Excellence, Accountability, Service and Integrity with internal and external stakeholders, customers, students and members of the community.
  • Provide leadership in all culinary skills, including proper food preparation, quality control, safety and sanitation and customer service.
  • Menu planning and recipe development for both cafeteria style service as well as catering and special events and direct the serving of nutritious economical meals.
  • Prepare, cook, and season food using the standard menu in following prescribed formulas and established standards.
  • Prepare and work catered events as scheduled.
  • Ensure staff adheres to HACCP guidelines to guarantee efficient, safe and sanitary food production, preparation and presentation.
  • Train and supervise food service staff in all culinary skills, including the receiving and handling of food, traditional and display cooking, presentation and service.
  • Direct the operation of the serving line and cash register.
  • Check all gas-fired and electric ovens and other kitchen equipment before going off duty; is responsible for the security of all switches.
  • Routine kitchen cleaning and deep cleaning as required and/or scheduled.
  • Record keeping through customized computer software.
  • Communicate effectively and enthusiastically with the dining staff.
  • Develop relationship with clients and anticipate needs and expectations.
  • Organize inventory and conduct inventory counts each semester or as scheduled.
  • Assume duties of the Manager in his/her absence.
  • Other duties as assigned.

Education/Experience/Knowledge/Skills

  • Associates Degree in Culinary Arts from accredited culinary program, or equivalent training and experience.
  • One to two years experience preparing meals and refreshments for large groups is preferred.
  • Prior experience in supervising staff, ordering food and performing other management type functions.
  • Menu creation, purchasing and inventory control experience.
  • Ability to multi-task, and concentrate on task at hand with constant interruptions.
  • Good written and verbal communication skills.
  • This job description covers a position in which the percentage of time spent on the essential functions will vary based on the workload and will ultimately be determined by the supervisor.
